Creamy Curry Chicken on Rice

I planned this menu on Sunday but it turned out to be a perfect day for it – wet, gray, rainy, cold, awful… perfect comfort food.

Skinless chicken thighs (bone-in) and cream of chicken & cream of mushroom soup – the healthiest I could find (low fat / low sodium)

Mixed the soup together with a can of milk and the spices: curry powder, ground ginger, ground turmeric

Fresh mushrooms (white & baby bella) then the creamy sauce – baked in a 375-degree oven.

Roasted asparagus with olive oil, Herbs de Province and freshly ground pepper.

Served up with Asian short grain rice (I like “sticky” rice with this sauce) – good warm comfort food for a cold evening
***Ideas: I might increase the amount of curry powder I use next time.
