This was on the menu for a dinner last week but didn’t happen – turned out to be a very nice brunch recipe too!
Yes Yes??? that is imitation crab – it was on sale and worked great for this recipe.. admitted, lump crab meat would probably be better and more decadent! Saut??ed with olive oil and garlic
???then added in baby spinach and saut??ed until the spinach just started to wilt
Toasted English muffins topped with Hollandaise sauce..
.. then the crab spinach mixture..
..then poached eggs and a little more Hollandaise. Totally hit the stop! YUM
