Comfort Food: Mabo Tofu Ramen

HealthCampLA was a great event but jetting off to LA – staying 36 hours – jetting home… exhausting! We managed to get a couple hours sleep but definitely didn’t feel like going out so, after a very long few days.. Comfort food – we had all the ingredients needed for some homemade ramen.
Chicken broth with some fresh ginger
… added leftover Mabo Tofu, which includes tofu & pork sausage, some leftover roasted chicken from the freezer, and raw eggs
I cook the ramen noodles separately, the broth from the ramen is frequently “sticky”, and then…
…top with the poached egg and broth mixture
Finally some fresh cilantro
