Christmas Dinner for two

Quiet Christmas – just the two of us. The kids were off to Virginia Beach to have Christmas with their Dad. A beautiful white Christmas… snowed for a while this morning. Stopped after a good dusting but it sounds like we’re really getting some substantial amounts in the next couple days.

Dinner for two: 2 lb. Turducken rubbed down with olive oil, Herbs de Province and freshly ground pepper. Parboiled the red potatoes, carrots, and parsnips and tossed them with olive oil and more Herbs de Province. Also some baby bella mushrooms. Roasted the veggies with the Turducken at 350-degrees, covered, for about 1 hour. Then uncovered for about 30 minutes.

The Turducken sliced up beautifully, still moist and tender but topped with my Heart’s delicious gravy – Perfect !

Only thing missing, cranberry sauce – because I totally Forgot about it. *sigh*

Dessert – my Heart’s wonderful mincemeat pie with gluten-free flour… YUM!!
