My dinner plans were waylaid when my Heart decided our window Basil plant was going to start taking-over the apartment. His idea – Caprese. I think this dinner actually turned out better than my original plan!
Look how beautiful my Heart’s Caprese turned out – I could smell the balsamic & basil when I walked in the house!
Skinless, boneless chicken thighs dusted in gluten-free flour, Italian seasoning, & parsley flakes – browned in 1TBSP olive oil. Once flipped, added approximately 1c chicken broth and 1TBSP chopped garlic – cooked for 25 minutes, sauce reduced to a lovely gloss.
Served up on rice pasta with pesto – YUM!
