Chicken Marsala ala Wegmans

It is THAT time of year… the first group of students move-in on Sunday and it ramps UP from there so working until 7 or 8p.m. becomes the norm. I like Wegman’s Mushroom Marsala as a base – just added some (ok – lots) additional mushrooms

Pan full of mushrooms cook down to yummy mushroom-y goodness! I try to keep a jar of this sauce on hand for nights like this.

Tossed cucumber and tomato chunks with Italian dressing and fresh basil and let it marinade as everything else cooked

Browned boneless chicken breasts with the mushrooms and then poured in the sauce and let it simmer as the chicken finished cooking

We ate at about 8:30 p.m. but it wasn’t a bad meal… very homey and satisfying
