Chicken Casserole with mashed potatoes

LOOK – I actually made the Chicken Casserole that has been on the menu for what? …like three or four weeks! FINALLY!

I bought this packet at Wegman’s in the British section…. in honor of my Heart. I used five skinned chicken thighs, four medium carrots, and three small onions.

The casserole was cooked, covered, in a 350-degree oven for a little more than one-hour… it smelled delicious I mashed some potatoes.

Chicken and vegetables with gravy served on the mashed potatoes – It was very nice. Next time – less liquid than the packet recommended for a thicker sauce. My Heart suggested replacing some of the water with Sherry – will totally try that! YUM!!
