Anniversary Dinner: Shrimp & Scallops with rice

Today is the 3rd Anniversary with my Heart … I am thankful every single day for having him in my life – he is a wonderful and amazing man. We went out to dinner last night to celebrate (and I can’t believe I forgot to take pictures of all the yummy sushi… just too caught up in the food & evening!) because he teaches skiing Friday afternoon / evening and from 7am-7pm on Saturdays. So I just did a simple dinner that’s a favorite of his.

I bought really slender green beans – they were totally worth it. Cover them with water, bring to a boil, turn off the heat and let them sit for a minute or two and then drain and set aside. It was fairly late (6:30) when I got off work so I didn’t have time to run all over the place for the scallops I was looking for. These weren’t great but they would have to do so I thought I would supplement with some jumbo shrimp.

A quick sauté of the seafood in about 2Tbsp of butter & chopped garlic, until just cooked through and browned. I added a little olive oil to the green beans and tossed them over a relatively high heat until just slightly browned.

Served up with some plain long-grain rice. I really liked the way the shrimp turned out, I didn’t overcook them for a change… and I’m a huge fan of scallops. A very simple but very satisfying Anniversary dinner – YUM!
