This was a pretty good week – stuck to my menu… well, close!

Sunday, Jan 15 – My Heart had a cold so a nice hearty soup – Zuppa Toscana – seemed like a good choice.  Dessert: Rice Krispy cupcakes (pic at the top of the blog) – loved the soup and it wasn’t bad leftover so made for good lunches too.

Fish Monday, Jan. 16 – Smoked Salmon & Egg Open Faced Sandwiches – it was a busy day so a quick dinner was a good plan – this was delicious but I think we’ll do poached eggs next time

Tuesday, Jan 17 – Celebrated my Heart’s birthday and our 4th Anniversary with a lovely dinner at Iron Bridge Wine Company – definitely steak night for both of us

Wednesday, Jan 18 – Was a cold night, so perfect for one of my favorites: Jambalaya

Thursday, Jan 19 – I have a late meeting on Thursdays this semester and my Heart was coming back from DC. Perfect night for Eggs Benedict Florentine .. Delicious!

Friday, Jan 20 was spent up on the slopes, skiing with my daughter and son’s girlfriend – that’s my daughter, heading down the hill to my Heart who teaches part-time at the resort.

Unfortunately I came down with a cold so I didn’t get a chance to go skiing on Saturday – comfort food lunch?  Yakisoba topped with fried eggs.. works for me

Saturday, Jan 21 – Dinner for my Heart after a day of skiing: tortellini casserole with tomato paste mixed with pesto and topped with shredded mozzarella and Mexican blend cheese baked for 25 minutes until hot and bubbly
