2012 Menu 11: Mar 11 – Mar 17

This was my breakfast in bed on Sunday morning, March 11 – my Heart’s 1st attempt to copy the Voodoo Donut: Bacon Maple Bar, which is absolutely amazing (he even brought us home some from his trip to Portland) – the above was a gluten-free waffle, toasted, topped with a maple glaze (he is working on making it more of a frosting) and slices of thick cut bacon… what is NOT to Love!!

….the waffle sundae – gluten-free waffle topped with vanilla & caramel ice cream, caramel sauce, and toasted coconut.

Fish Monday March 12: Creamy Seafood Enchiladas – I am really pleased with the way this dish turned out.. although the green chili salsa was a little incendiary so we might try a MEDIUM green salsa next time!

Dessert on Monday night – my Heart whipped up some vanilla pudding, topped with caramel sauce and a couple of Bahlsen Hit cookies (there is actually one on the BOTTOM under the pudding) – this was delicious, especially with that bit of crunch.  I LOVE these cookies… the cookie part is very crispy and not very sweet… almost like a butter cracker.. and the center is a very rich chocolate – this was a yummy simple dessert!

Tuesday, March 13 – Easy One-Pot chicken Casserole – super simple and Yummy!
Wednesday, March 14 – we ended up going out to our local Bistro for drinks & dinner

Friday, March 16 – We were going out late with friends so we had a quick snack: cheese & spinach quesadillas – very simple

 

Saturday, March 17 – St. Patrick’s Day – dinner out with friends
